A restaurant with a menu of forty things is telling you it has no opinion. Six courses is a position: this is what is good this week, this is what we do with it, and if you do not want the third course you should probably eat somewhere else.

19:02 / The pass
Everything leaves through one window
Two cooks, six courses, twenty-two covers. Nothing is plated until the table before it has been cleared, which is why there is one sitting.

16:40 / The stock
Monday’s bones, Thursday’s sauce
Started the day the animal arrives and reduced across three days. It is the one thing in the kitchen that cannot be made to order.

15:15 / Prep
Four hours before anyone sits down
Everything that can be done early is done early, so service is assembly and heat rather than cooking.

17:30 / The braise
A bottle goes in and does not come out
The Dexter braises in more wine than most people would think reasonable. It reduces to about a spoonful per plate.

21:40 / Last course
Finished at the pass, not in advance
The burnt honey goes on thirty seconds before it reaches you. Any earlier and the yoghurt takes it up.

The kitchen is the film above. These are the plates — laid out as an editorial spread rather than a carousel, because six dishes is a menu and not a catalogue.


Second
Barley, not rice
Pearl barley cooked like a risotto in the stock from last week’s bones. Rosemary from the yard. It takes forty minutes and cannot be rushed, which is why it is on Thursday.

Third
Sea trout, cured Monday
Cured in salt and the last of the winter citrus for three days. If the boat does not come in, this course becomes something else and we do not tell you what it was going to be.

Fourth
The bird, for the table
Brined overnight, roasted whole, carved in front of you. This is the only course that arrives on one plate for everyone, and it is the one people remember.

Fifth
Burnt honey, sheep’s yoghurt
Honey from a hive on the roof of the launderette opposite, taken too far on purpose. Sharp, not sweet. People either finish it or leave all of it.

Last
Whatever is left
The kitchen sends out the thing they most wanted to cook and could not justify as a course. It is different every week and it is not on the menu.
